Goblin Cupcakes
These chocolate with cream cheese cupcakes are delicious and fun. There is also no need for frosting these.
Filling
| 8 | oz | Cream Cheese, softened |
| 1 | egg | |
| 1/8 | tsp | Salt |
| 1/3 | c | Sugar |
| 2 | drops | Food coloring - orange |
| 1 | c | chocolate chips |
Mix filling. Set aside. Preheat oven to 350*
Cupcake
| 3 | c | All-Purpose Flour |
| 2/3 | c | Cocoa |
| 2 | c | Sugar |
| 2 | tsp | Baking Soda |
| 1 | tsp | Salt |
| 2 | c | water |
| 2/3 | c | oil |
| 2 | Tbsp | Vinegar |
| 2 | tsp | Vanilla |
In large bowl mix flour, cocoa, sugar, baking soda, and salt. Add wet ingredients. Beat on medium speed 2 minutes or until well combined.
Fill paper lined muffin cups 2/3rds full with batter. Spoon 1 level TBSP filling into center of cupcake.
Bake for 20-25 minutes. Cool.
